Is there any way to check a knock sensor to see if it's out of spec? Or does a knock sensor either work or not.

it is easy to check. have someone look at the scanmaster while the car is running tap on the downpipe with a ball pean hammer. (not hard!! don't dent it) . light throttle.
they are more time that not just plain good or bad. if your suspect just get a new delco one they are cheep.

I would just have someone look at the scan master and slam the hood down. It should go crazy!!

Can a knock sensor be too sensitive? Is there a way to bench-check it?

It can be too sensitive if not torqued to the correct spec. It also will not be sensitive enough if the sensor is torqued above spec.

I love it! Never knew this.. I'm gonna try to just to see now! :p

RPM must be > 1000 for the ESC routine in the chips code to function and report knock to the scan tool unless your using a knock gauge which is tied directly into the sensor.

FYI.
