MAF problems??

Car ran fine with the stock MAF. Now the car is not accepting known good maf's. I placed a voltmeter on the signal wire with the key on engine off. After about a minute and a half the voltage is not steady at 2.5 volts or so anymore. It starts pulsing between 1 volt and like 3.6 volts. The led bar at the bottom of the meter looks like its rising and dropping to a steady drum beat. During idle it will sometimes drop to 6 on the scanmaster and start to run crappy or die. If i slowly bring the car up on boost on the foot brake, at like 3-4 psi readings will jump to like 128 and the start running real crappy and puffing black smoke(over fueling). I did the Vortex buick flow chart and came up with a bad sensor or connection. Car has a caspers harness witch is fairly new and my signal wire is gray with a red tracer instead of yellow. Anyone ever seen this?
 
You really can't tell what a MAF is doing with a volt meter. The MAF sensor puts out a frequency proportional to air flow. You would have to put a scope on it to see what it is really doing.
 
Ok gottcha. But at the Vortex site it says that KOEO you should have 2.5volts at the ECM connection for the MAF signal. Mine fluctuates pretty bad after a minute or so of KOEO. Is this normal?
