210/215 hyd roller what is the difference in ratios and what one should i get?

the higher the ratio the higher the total lift - the push rod gets moved either towards the valve for higher ratio's or towards the center of the engine for lower ratios.

Some possible issues are valve to piston clearance or more common the space where the push rod goes thru the head - may need to open up the hole.

Is there a target total valve lift you seek? Total valve lift is the lobe lift times the ratio of the rocker.

I'll take the 1.65's man!!!!!!

All things being equal with no clearance issues more lift never hurts but dam-it; it may add torque and some HP. :D

I have the same cam with 1.65 roller rocker's and everything came out perfecto no problem's.
