IMO if it's in a shop and you don't have to worry about the elements something like silk (military surplus parachute) would work really well. It's lite, smooth, and breath's very well.
I dont know how serious you guys are about keeping your cars away from moisture, but this thing is awesome. When I roll my GS out of storage in the spring there is no sign of any corrosion anywhere. I am talkin none, no surface rust on anything. Brake rotors, exhaust, and undercarraige. It is expensive at $400, but I swear by it for the long Michigan winters. www.classiccarcocoon.com
