if i put a new pump and hot-wire kit on my totally stock T, will i need to install a new regulator? or will the stock one do for now?

Sure.
An adjustable FP regulator gives you the ability to fine tune your car, but if your car is stock and you are using stock chips, stock FP will work fine. When you start to upgrade the car, an adjustable FP regulator should be on your mods list, though.
