Why do some turbo's have water cooling, while others don't, which is better ? I would assume water cooling would just make the turbo run cooler, thus the cooler the better, do you just tap into a coolant line somewhere, or does it take a special hook up ?

Usually it's the ball bearing turbos that have a ball bearing on the exhaust side that get water cooled.

Relatively easy to do using heater hoses and return drain with T's and some hose and barb fittings.
