I think if you have collectors insurance, they send you to someone that appraises your car for you and them, at least thats what I remember the grundy guy telling us at our meet one day.

I believe that Sports Car Connection does appraisals, I think that they are in Delray or Boca Raton, but I have never been there so I don't know for sure where they are located. However you might try calling information and getting a phone number for them. Hope it works out.
