I am currently running up to 25PSI of boost with my combo, but I dislike running that such a large amount of boost.

The Chip is a Jim Testa chip with 18-19 Degree's of timing. I am looking into adding a few more degrees of timing so that I am forced to turn down the boost.

Is it a good idea to increase the timing so that I can make just as much power with less boost?

I feed the car a steady diet of 97 Octane, and lightly spray it with alcohol.

Increase the timing at your current boost level until it detonates and then back off a little. Generally, I think with a big turbo more boost and less timing is better for a given octane. When limited to 100 octane, I run my ME at 18 degrees timing and 23psi instead of 19psi and 24 degrees.
