Here's a hint about the exchange rate that I always use while travelling in Canada (Which is quite a bit).

Most decent banks will allow you to use your debit card, and hold on to the money until the exchange rate is most favourable. My bank does it that way, and I've been to lots of overseas countries.

If you don't have a debit card, you can use credit. I think that might work

Also, the Hooters down there does, in fact, rock.

We went to Disney World for our honeymoon 7 yrs ago. We had a great time, but didn't get to do Universal (wish we had). I think the best thing we did was to stay on site in a resort. The lower level ones were priced about the same as local hotels of the same caliber. Port Orleans was very nice, great restaurant downstairs. It was all right there, we only drove a couple of times the whole week. There's a tram-thing that picks you up to take you to the park so you don't have to deal with that huge parking lot, and you have a quick entry gate to avoid some lines. At night that bar island was a lot of fun, bars of EVERY type. There is a ferry ride out to it from the hotel.

Oh, take a small backpack. Fill it up with snacks and the smallest cooler you can find. Take some water and cokes. That stuff is SUPER expensive in the park. A hat, sunglasses and sunblock are a must. We were there in Oct, which was perfect (no crowds, not too hot) but still got burned.

Epcot is ok, but kind of dull. Work the other parks and Universal in for a couple of days. Wish we'd done that.
