In your case just run it until they go on and then you have a ballpark number for your chip. I'm assuming you have a Scanmaster or aftermarket gauge to read the temp.

I like 175 turn on then 168 off, F body rad with Ram Fans and 160 thermo.

Mine not coming on. I replaced the thermostat and install a new gauge where the old idiot light sensor was. Maybe I disturbed something in the process. Watched the temp go up and could see when thermostat opened but didn’t have the fan come on. Temp went up to 190. Ill retest today.

If you run power directly to the fan does it come on?
 
Try turning on the A/C . This is one way to test that the fan itself works. Should come on in high speed.
If it does not come on with the A/C try bypassing the fan resistor. But try the following first.
You can also try swapping relay 23 and 24 on the drivers side inner fender if it does not come on at temp A/C off. That way you'll know if the low speed relay is bad.
23. Low Speed Fan Relay (ECM Controlled)
24. High Speed Fan Relay (Not ECM Controlled).
