I'm running Champion GN1 heads and intake. What thickness gasket should I use?
 
That is an open ended question. Everyone's measurements may be different.

The parts you already ordered may work may not.

To know for sure you need to set the intake in place using only the end gaskets, slide the intake to one side measure the gap on the other side then divide in half.

Hello - i tried this method on my engine - 0.15"/2 = 0.075in gap per side.

the gap must get smaller when intake is torqued to 32 ft#s, because the end gaskets compress?

wondering if the Felpro 1200 (0.060" paper thickness) is going to be thick enough, or if i need to find 0.075" gasket set

I never use the supplied rubber ends.
Drop the intake on the heads, shim using valve spring shims to make sure the ports line up.
Never use 1200's unless you have fully ported GN1s, all other applications I use the factory tin valley gasket.
RTV the ends in lieu of the rubber ends.
