Will the trans build up the same heat foot braking vs. using a trans brake in the same amount of time?

Darn close.

The main difference being that a trans-brake will allow you to stall the converter a bit higher because you are not overpowering your rear brakes.

Other than that, you are converting 100% of your engine power to heat either way.
