How long will gas hold up sitting in a tank through the warm and cold weathers?

I wouldn't want to push it past one season,

As long as the tank is full that its in, that will reduce the area that can produce moisture within the tank. I fill my boat up at season end and it sits from Nov till about the end of March without any issues at startup the next season and runs fine on that first tank of gas for the year.
For Race Gas, I wouldn't want to push that much past 4-6 months since thats a critical application
