how do you check the actual stall convertor in a car. I have a 2800 stall but it does seem like it's stalling high enough.

the highest rpm attainable with the transmission in gear ,the engine at wide open throttle ,the brakes applied and the car ,tires and input shaft stationary is the stall speed in rpms for the given application.there is very good info on this in the converter section of our 200 page gm 2004r manual.
