If I go with rear disk brakes, should I remove the factory proportioning valve and get an adjustable one?

It depends on the caliper/ rotor/ pad/ tire, sizing.

What's worked best for me was getting a stock brass Combination Valve, and plugging the chambers/ switch off so that it was just a distribution block. For me, this has worked out fine, using the PST rears, and 12" B-Body spindles, and then with the complete 02 Camaro brake set-up.

*Plugging of the chambers*, meant getting some brass plugs made then silver solering them in place.

IMO, it's going to be up to your combination feels like before you need to make the decision about what you'll actaully need. While you might think what the heck, using one if it's not needed just adds one more item that might fail.
