I'm having some trouble with my Kenmore gas oven, the digital display goes
blank after using the oven. Seems there is a heat related electrical issue.
(I verified the wall outlet still has power when it acts up.)
It will come back on after a while, and work normally until the next time
we use the oven.

Anyone familiar with ths problem?

I dont know myself, but try going to Appliance411.com or the handymanwire.com forum websites.
I will never buy Sears appliances again. I had a stove, 2 years old, used bottom once, went to use again, the wiring in back caught on fire. Called Sears, they said they would fix it, no problem. I get a call later on from a repairman saying he will come out to look, but its $60 minimum to show up. They wouldnt do anything, couldve burnt the house down.
 
If it isn't too old there should be an electrical diagram taped to the case or back somewhere on it. That would help immensely with troubleshooting it.

Most likely a thermal circuit breaker tripping, either because it has become defective and trips early, or it moved closer to the heat somehow.

My buddy's convection oven had a thermal breaker trip the other day and I found the schematic taped to the top of the case and found the thermal breaker and reset it since it was the manual type. Works fine now and symptoms were no power yet power was good into the unit.

Hasn't tripped since luckily.

I'd start with trying to locate a service manual/schematic.
