you gotta try it! duck takes to smoking really really well, particularly if you use a bitter wood like mesquite or pecan and a citrus kinda seasoning or flavor at a lower heat like 185-225. Just have to watch the grease run-off cause ducks are fatty and can over flow your trap if your not careful. But ifyou can catch the grease into a clean container the gravy made from duck fat will rock your socks.

Love your smoker by the way! ive always wanted one like that!

I use some old barrels.

I will be smokin a few ducks and some chickens.... but thats about it.

If you marinade it for about a week and slow cook it tastes almost as good as chicken.

We can't even give duck away. Taste like shit for the most part. Unless you spend a bunch of time on it.
I mean you can eat it ..but why.
 
I do smoked turkeys in January, very tough to beat, never tried a duck, did 24 birds on average the last 3 years, 4th of July consists of a local meat shops fresh made brats boiled in jalapeños and water then grilled to perfection and burgers grilled with McCormick Montreal steak grilling seasoning, along with all the fixins. Awesome food then blowing the sky up makes for a great day! Happy 4th to all, celebrate your freedom and thank a vet, this is one damn fine country we live in.

He probably got some road oil on that slick paint job and needs the wine to remove it.
