My wife's 2002 Regal GS has a Low Coolant light on at all times. The coolant is not low, in fact it is exactly right. Where is the sensor that trips this dummy light? I looked on the recovery tank and I didn't see one. I am guessing that I need to replace the sensor to correct this problem.
 
Its located on the radiator tank just below the radiator cap if I remember right. Since its just a reed switch you might have a intermitent contact on the wiring or something rather than a bad sender.
 
It's pretty common for dex-cool sludge to build up on the sensor. All you probably have to do is remove it, clean it, and reinstall. I would personally drain some coolant first, in order to avoid a mess. As stated, it is a few inches below the rad cap.
 
That's what it was. It was a little gummed up, so I cleaned it and reinstalled it and now the light is out.
