Oil Pressure Sensor

What all does the Oil pressure sensor do?

I am going to install an electric oil pressure gauge and would like to replace the current sensor with the sending unit from AutoMeter. Is this possible?

runs to the idiot light and a relay for the fuel pump.

It works the oil light in the dash, of course,, and it's a secondary curcuit for the fuel pump relay. You'd be better off Teeing off the stock sender location and using both senders.
