What exactly is involved in pinning the governor spring? While I have mine out I might do it just for PM reasons. Will it change shift points?

If you remove the same amount of weight off the governor (small weight ) that you are adding with the pin--shift points will stay the same. More weight = earlier shifts. 1 gram = 200 rpm.
 
My advice: Weight the flyweights on a paint mixing scale (if you have access to one) before you start. Add the set screw and then adjust the flyweight back to the original value by drilling small holes in the weight. If you remove too much, you can easily MIG weld the holes and get back to where you started.
