I believe it's been done, but I can't remember where I seen it.
As far as use one for data logging has been discussed here. Tho I can't remember the out of that.

Dsappar installed an ipad in his dash. But it took some extra work to make it work correctly. I am going to install a windows 8 tablet in mine...
