Anybody here have their own beef/turkey jerky maker? Recipes?

I have a mitsubishi PLC that was used to make parts for the big Japanese auto maker. It can do pretty much anything I program it to. Time on at temp X and off at temp y. Run for a certain time, ring bell, email, post on a web page when things are completed. All of this can be done from a custom frontend program so I can log results in a database and compare quality/results of the batches I make.

Anybody make their own?

The best is with a tender cut of venison. A good backstrap or similar. Soak it for 24 hours in a mix of Terraki and Worcestershire overnight.

Dry.

Done.

I usually make most of my jerky out of duck meat but I will use deer or elk to supplement my supply if the birds are scarce.

I made snow goose jerky once. It wasn't intentional, the dogs wouldn't even eat it.
