Big valves worth it??

How much of an advantage does a head like say Champion Iron's with big valves have over a "good" ported set of stockers with stock valves with a good valve job?

Also, would it be wise to do the port work with the standard valves and keep the stock cam? Is it possible to get in the 10's with the stock cam?
