Intermittent wiring. I had a similar problem, car would run fine and then after an hour all of a sudden die and not start again. I'd wiggle the harness by the MAF and things would be back to normal. Sometimes it would die driving other times it just wouldn't start. It turned out to be a tiny bit of corrosion on the Casper's plug and play harness. I cut the connector off the Casper's harness that went to the MAF, cut the stock connector off the wiring harness, soldered the Casper's connector to the stock wiring harness and haven't had a problem since.
Weather Pack connectors are nice but don't necessarily completely keep out the corrosion and it only takes a tiny bit to make a high resistance connection. I routinely check all my connectors and tighten, clean them as necessary. Remember everything has been trying to corrode for 27 years.
