I restore early 80's electro-mechanical slot machines (little sideline) and use these inside the machines to monitor power supply voltages. Makes troubleshooting simple. Good idea to slip them under the telltale lens, kudos to OP.
All the ideas for what they could be used for are great, but for anything other than volts wouldn't you need something to convert the volts into the value you need?
I was thinking about a boost display on the right side to go with the factory bar one.To use for other gauges I'm factoring buying the digital gauges (oil, temp) then removing the existing display from the gauge soldering in wires and running it to the green display.
