Found out the car I bought has had the tranny gone thru, but not extensively.

Other than the rebuild it only had a Billet servo, shift kit, and extra clutches put in.

How fast could I expect to go before this tranny starts giving me trouble. I'm fixing to put in a new converter, should I just wait and have the tranny gone thru before installing the converter?

The car should run in low 11 second range.
 
The parts you mention are mainly for improving shift performance and won't really extend power handling capacity much if at all. My best advice would be use it and enjoy it until you break it, then go thru it and install a few billet parts to cover yourself for extended power and dependability.

I know that the shift quality helps the longevity of the trans some...my trans had a weaker than stock servo and it was flaring bad by 10,000 miles and I was only pushing maybe stock power.
