OK, here goes.

When is gets really warm out (like today, 82*) or even hot, 90*+ my car runs at 175-190* 175ish if driving easy at highway speed, 180+ in town, & will heat up to 190* if I give it a WOT blast.

I know this isn't hot-hot by any means, but does this sound like a 160* 'stat with a radiator that can't keep up or a 180* 'stat just doing its job?

Radiator is a fresh rebuild (as of 2004) with less than 2,500 miles on it. Coolant maybe getting old & weak?? Is there such as thing?? I was told when I bought the car (2009) that it had a 160* 'stat in it, but now I question it.

Is it worth taking the thermostat out & flushing the system, or just drive it?

OH, and when the air temp is cooler, 60-70* she runs 170-180* no matter how I drive it.
 
If your not sure about the T-Stat. swap it out with a brand/temp to your liking. If you see temps above 210-220ish at idle/ highway etc then i would do the flush&fill all that good stuff. With a 160 Thermostat car will,should IMO run temps about 180, it sounds fine to me. Take care
