I've done a search and the general consensus is to tighten the sensor to 14 ft-lb. Since I know torque values can vary a lot depending on whether the threads are lubed, etc. I was wondering if there is anything else to the installation procedure? The new sensor has a coating of what I assume is thread sealant on it, is this all I need or should other sealant or lube be applied before tightening?

I know I'm probably being a little OCD about it, but after putting all the work into this engine getting the top end of it back together, I want to make sure the knock sensor is working before it sees boost :)

oh, and this is on a Hot-Air, if that makes a difference
 
Just install it with what is currently on the threads. Unsure if the engine is on the stand or in the car but you can always test the sensor by tapping on the back of the block with a hammer just to see if it registers on your scantool.
 
X2, Install the knock sensor the way it came out of the box and tighten to 14 ft-lbs.
