On our cars (i ask this question because our cars are soo modified and normal books & articles may not apply any more) what part of our fueling is adjusted by the narrow band 02 sensor's input? I know WOT that sensor's out of the equation but when is it not? Just cruising? Or acceleration as well.
 
The ECM adjusts the INTs.. which slowly adjusts the BLMs.

MAF also has a big hand in messing with it as well during cruise.
 
Anytime it's in closed loop. Mostly cruising and light accelerating.

With a newer scanmaster and TT 91 street chip, standard issue aluminum camaro maf and my translator, can I utilize the little blinking dot on the scanmaster to determine this? Is that blinking dot in real time?

Yes. when the dot is on solid you are in closed loop. At that point watch int and blm to determine how much fuel correction is taking place.
