you might want to double check to make sure you dont have an air pocket, recently replaced the stater on my Daily driver and had a similar problem, had to remove the radiator to replace stater, i reassembled everything let car warm up, and topped it off, took for a spin around the block and came back with car almost in the red, when cooled check radiator and it was full

, let car run again seemed ok, went for another spin around the block. and same problem almost over heated, parked and then stated to squeeze hoses, and sure enough there was air.
i find it kinda odd that you replace hose and now it run hot, and fans wont turn on, you might have air trapped behind tstat, and not sure which sensor controls controls fan but bet its next to tstat
