Re torque heads

when re torquing heads do u break the nut then re touque that nut or do u loosen them all and touque them ? Also I have always torqued in 3 steps 40lbs -60lbs-80lbs is this correct ?

I've never loosened them at all. I hit them with the last torque spec I used.

after final torque sequence , one bolt /stud at a time .. break loose - retorque to final value
ill usually work up to 75 on all.. 30 to square head and fasteners on gasket then 45-60-75 .. then after it sits a while... in order break loose one and and then go right to 80 , move to next in order
after all are done and ill come back and do the two long ones at top center again , break loose - swing to final torque
