I have a new set of 28x10.50x15 MT ET Drags that I'm going to be running on the back of my car. They are replacing the 28x11.50x15 Hoosier QT Pros that I've had on 15x8" wheels.

I'd like to get a set of Weld Pro Stars to match the front set that I already have. I know someone that is selling a set of "like new" 15x10's. Is that rim width ok to use with these tires, or should I just get a set of 15x8.5" Pro Stars?

15X10 is actually what Harlow Racing recommends for use with a 10 inch tire. When you have a tire that is wider than a rim, you actually lose some of your contact patch(not much though).
Harlow sells racing tires and has good technical support.
