I'm about to go on a long highway trip. Can I tweak my MAFT settings for maximum fuel economy? If so, which parameters should I modify? And with which values?

The Translator works best when your driveablity is working great. Even if you made a change to the MAF BASE setting, the BLM's would still compensate for that change.
You could always turn up the base timing a few degrees, but be careful and watch for knock retard.
About the only thing that would make a difference over a long highway trip would be to turn on your "lean cruise" option in the Extender chip (assuming you have one).

I didn't see where that was adjustable on the MAFT Gen II. All I saw is where you could alter timing at WOT at different RPM.

Sorry, I didn't realize you're running the GenII. Assuming you have an Extender chip, the best bet would be to set "Lean Cruise" in the Extender's features.
