My guess would be that would be a little tougher without the skis under the bike.

you can still skip across water on a dirtbike without the little skis: the Nitro Circus guys did it in one of the episodes of their tv show and in their movie, then about a year later the Mythbusters decided to try to prove that it could be done and made it more complicated than it really needed to be.. i don't know about riding a wave without the little skis, but if anyone could pull it off it would be Pastrana and company..
