gas vs charcoal

in my opinion i've never had a steak cooked on a gas grill that tasted good. i've got several freinds who have them and alot of the time the food turns out bland. i've been told you can take wood chips and put them in aluminum foil and make a pouch out of it and it'll give the meat that smoke taste you get from charcoal grills without the big mess. for me i'll always use the old school charcoal, i do alot of grilling myself, just some kabobs the the other day. I just prefer the taste of the charcoal over anything else. now i haven't had one from one that you guys are talking about but i'd be willing to check it out.
 
With regard to steak, the charcoal is not about adding some special flavor that a gas flame lacks. It is about being able to use extreme high heat and not burn the steak due to the control of the air thru the grill. If given the choice between a gas grill and a skillet on the stove for cooking a steak, I would cook it on the stove because that will caramelize the surface of the steak. That greatly improves flavor and texture of the meat.

That is what my buddy taught me basically. He uses the flames off a charcoal grill to "sear" the outside of the steaks and lock the flavor in... That is what I attempt to do, getting the flame right is the trick...
 
It is cool enough in most of the US - vacuum pack it and do not freeze - or better yet, it is too easy to just make it yourself so send the recipe.

But be warned - once you start enjoying fresh salsa, it will be hard to enjoy the stuff in a jar

I can't stand the stuff in the jar...so I've been making my own for some time...although it's an easy process, it's EXTREMELY time consuming. Be warned, V8Assassin voted my salsa best in the US...lol :biggrin: Like I could disagree!
