Intake gaskets? Which one to use?

Felpro 1200 do not come with the pan correct? So I did a search and everyon is using the stock pan with the 1200s cutting the stock pan to the 1200s. Why? Why not just use the stock pan and enlarge it to the actual port sizes on a pair of ported heads?
Wouldn't using both gaskets be too thick and raise the intake up when bolted down?

Mike, I'd just buy the felpro with the valley pan and install it. Port sizes on that gasket should be as big as ported head intake holes unless the porting was radical.
