why is it the felpro stock replacment gaskets are a valley pan, yet the 1200's are just 2 seperate gaskets? do you need a valley pan?

Yes...maybe....sort-of. IF your ports are stock, then use the stock style valley pan gasket. If your heads have been ported to the 1200 Fel-pro port size, then you MUST use the 1200 gaskets. The 1200 gaskets might potentially create a mis-match due to the thickness, but usually not. Stick with valley pan unless it doesn't match the ports. Best way to go.

On really ported out stock heads or alum heads the 1200 are prefererred. You normally would not use 1200 on steel heads because there is really no need to hog them out enough to justify the 1200's. We would always use the stock valley pan with the ports cut out and just keep the valley part to use with the 1200 on aluminum headed cars. Helps keep oil off of the bottom of the intake and out of the PCV valve. Tricky to trim. You keep just enough to hold the valley pan in place but not interfere with the ports.
