quality steel equipment or tools in just about any field.

drafting equipment made of stainless.

portable drafting/drawing board (i own one lol)

just about extinct to everyone else but me and probably a small group of people here

scale models where you had to cut, paint, assemble, and apply decals that may or may not be accurate

balsa model plane kits that operated off a gigantic rubber band, and required you to cut the pieces and superglue the pieces together, then apply doping materials and tissue covering in order to make it resemble a plane (nowadays everything is basically prefabricated for the lazy people)
