I would definitely put a gauge on it to see what's going on. Or pull the drivers side valve cover and see if it's getting up there.
If it was sitting for a while and lost prime I would think you could easily hear the lifters clacking when running with no oil....
Verification that the idiot light is working properly is an important first step if you can't verify oil pressure some other way.
The sender/sensor usually fails shorted which is light ON, unless the connector falls or rots off then it won't work at all.

Did you verify that the oil sender connector is on and in good condition ? Definitely use a gauge to confirm the sender is working properly .

Sounds perfectly normal (beautiful) at idle. I do have a roller cam.
Will have to check the sending unit.

It is attached and looks good to me. I am in the process of troubleshooting it. I will keep you posted.

Best of luck, I had my own oil issue lately.

Highly recommend at least 2 external oil gauges, electric and mechanical. Pre-fill and shut it down asap when any gauge doesn't show pressure flying up after 2 seconds of new oil starting.

I change the oil right after the car has ran for at least a few seconds so the bearings have oil on them in case anything stupid happens on start up after the change. Anal but we've all had stupid things happen, PTE relocation filter blew top oring and pissed out oil and lost pressure but I caught it asap.

I use one with the tool mentioned above, works great on a small block chevy. Can't see how it would be much different for a V6.

Update- my friend came over and he did the tool with a drill. Oil pressure idiot light went off. We pulled the turbo oil feed line to verify- plenty of pressure.
The bad- we lost timing. So will have to buy the Caspers timing tool and reset the cam sensor. Thank everyone for the help.

Now what is the easiest way/tips & tricks to set the cam sensor?
