I suggest you do a search on this topic since it was just covered a few days ago. Nick Micale has a good article on it and years of experience!!!

had bottles sitting here for years. no issues, then again its always warm here

My half bottle made it through two mn winters and it was well below zero in the garage. No buttermilk action....bottle is 3 or 4 years old
