Very Quick question

With the scan master, with key on motor off..should the AF readings be at 3? Thats what mine is saying and at idle its 7-8.

The MAF table has a "minimum" or lowest number, at the begining of the table. Depending on the chip, it could be anything from 3-5. With key on, engine off, that's what you're seeing. It's the minimum reading you'll ever see, no matter what may actually be happening.
