I was all gung ho about this DIY when I got the pump, but now I am getting concerns.

1) In my mock up, I made no provisions for a return line. Is this complicated? Do I have to have them?

2) Any clue where i can find a pressure switch that I can mount in the car, so that I can vary the "ON" point?

as far as the return line goes, no you dont have to have one, it is called a "deadhead" setup where the pump turns on and only runs when it is flowing versus running nearly all the time and controlling the flow with a solenoid.

It would be possible to run a grainger bleeder valve to control turn on point with the switch under the hood and the bleeder in the car.
