Need advice on wiring harness

Okay I want to put a SC3800 from a 95 Riviera into my next project, anyone out ther who knows how to trim the harness down to just engine functions? That harness is a F#@!/>< nightmare. I did the SFI retrofit on my 78 Turbo Lesabre myself, but this time it's a little more than I want to cut myself. Also need to find a place that can cut out (flash) the computer to get rid of some of the functions I'm putting this engine into an 83 Shelby Charger in rear wheel drive configuration using a T5 manual trans. Any help would be most appreciated. Thanks Brad Zeidler
