I am a bit confused, looking back at old information and current what the benefit of switching to a new 3 bar MAP is exactly. One source of info states that it is strictly beneficial for power logging or running alky while other info states that if you begin to modify, this would be a necessary evil for the additional boost... Can someone point me in the right direction?

The oem sensor is a 2 bar.. It runs the dash gauge ONLY.
Any device that runs at 2 bars or more will require a 3, or? bar sensor.
IE: Alky at 26psi.
Powerlogger w/ boost at 26psi....

So just an 87 GN with a T60, 60 lb injectors, turbotweak chip, etc. would be fine regardless of boost with the stock sensor if I were only running something simple like a scanmaster?

As soon as you pass 14 psi of boost the dash ga will go pegged. It will not affwect the engine, as the ecm does not use that sensor.
