My flange is slightly bowed from a little too much torque with headers hot. Got copper header gasket(doubled) and it lasts a while....buts its leaking again. Whats best method to straighten it?

Cut off the flange and weld on a new one. Machining it flat is possible, but a thinner flange will distort much easier.

The turbo flange is perfect. The leak is really small. The majority of the flange is flat, just the outer edges of the bolt holes is whats not flush. Where can I get a flange if I have to replace it?

A fabricator with a plasma cutter could make one for you

do you need it in Stainless or Mild ?

Believe it or not it's those copper gaskets the cause your warpage. Get the surface is flat and don't use gaskets they won't warp.
