valley pan and exhaust gasket questions

im rebuilding my top end and have ported stock heads and intake and have aftermarket headers. What gaskets are others running as im going with the SCE copper titans for the heads with ARP studs just up in the air with valley pan gasket and exhaust gaskets any suggestions would be greatly appreciated so i can get this back together and spank my friends vette LOL.

Felpro Blue intake valley pan gasket is what I have and what I keep hearing as the best. What I want to know is how to bend it right so that it seals the heads but doesn't drop too far into the lifter valley.

I thought there's just one way to bend it- push down in the center until the slits catch and hold underneath the heads. All ports should now be lined up and it's somewhat kinked in the valley.
