so i had 5 gallons left over in my tank that showed E75 on the display and I went to the Thortons in Park Ridge tonight and filled up with their fuel(E85)...about 10 gallons added and now the readout on the sensor shows E78-79....Im not sure this sensor will ever match what your tester is showing??

I don't think it really matters. You can max out your tune to that mix, and adjust accordingly later to whatever the sensor says
 
I think the fuel is around E85 or so and it did raise your level. I can't speak to the chemistry of how they mix but the tester has showed E85+ both times I tested it. Plus 27+ PSI no knock is a good proof too. :-)
 
corey oil in north lake wi. has it. I am sure you can find a source in chicago though.
 
If you have a smartphone there is a free app called Keendriver that lists E85 stations. Its free for android not sure about Apple phones

Just grabbed some E-85 from Thorntons in Clarksville, IN last night. Test 83%
