Can I take the LS1 MAF apart machine the housing flats out and bore it a bit and reassemble without causing damage?
If it is OK to do this. Will the MAF reading be different without the flat? any input would be great.

yes, depending on how much you machine out, it will be a bit leaner. Probably a bit more sensitive to turbulence.

In my 99 Z28 camaro, I took out my MAF, took it apart into 3 peices.
Took a hacksaw to the center part to remove that bar in the middle, then
use a dremmel tool to grind the nubs off that were left and made it smooth and round. Then put back together leaving just the plastic peice with the sensor in the middle. Car never ran too lean, actually on the dyno, the guy said it was "perfect" air fuel ratio.

And I could tell I picked up some HP from it... not much, but if I could tell, its something.
 
So it sounds like it would be ok to disassemble and reassemble.
Im looking to just bore it enough to clean the surface from the flats and make it even and smooth with the inner walls.
Turbobob says "it will be a bit leaner. Probably a bit more sensitive to turbulence."
Then my Question is will this be enough to affect driveabilaty or Performance??

driveability, depends. If you are running an open K&N, the radiator fan could cause idle instability. With a cold air kit driveability should be ok.

Performance: if you are over rich (like an LS1) you may pick up some power.

Anyone know the HP that the stock flowing LS1 MAF will support?

Approximation is okay. ;)
 
I took mine apart and made the angle straight from the leading edge to where it meets the center. It works OK been in my GN for 4 yrs now.
