Difference between Non-adjustable and Adjustable shocks

I'm using Ridetech front upper and lower control arms, front sway bar. I think it's called the Tru Turn package. I'm using an air system (shockwave) rather then coilover. Over the months I've read threads about "double adjustable" and "triple adjustable" shocks. What are the advantages (if any) in using one of those application as opposed to a non-adjustable shock.
