No...I didn't get fatter....
Gained 3 lbs of boost just with this simple swap.....is that normal?

Before I installed it....I was at 22lbs....
After...25lbs with no adjustments.

Luckily I always think ahead after making a change to anything airflow related and I had my fuel and alky set to max, cuz when I went WOT and saw 25lbs on the gauge....I was surprised.

My old OE MAF had both screens in it still, but it's basically the same internal ID as the LT1 MAF so I was not thinking the airflow would increase dramatically...but the LT1 is a single screen, horns out a bit and does not have that big ol' circuit board in the middle of it....so...
 
This is very common.

is the oem maf a restriction compared to the lt1 maf?

Yes this is from the amazing Mike Licht:

Stock MAF w/ 1 screen = 687 cfm
Stock MAF w/ no screen = 809 cfm
3" Impala SS MAF stock = 772 cfm
3" Impala SS MAF w/ no screen = 875 cfm
3.5" F-body MAFF stock = 940
3.5" F-body MAF w/ no screen = 1,040

In your case there was an 85cfm jump.
